Around a table we find ourselves peeling the aubergines, one by one. Depending on availability, we prefer to cut them à la julienne – but not too thin – or into round slices. Still raw, we season them with the other ingredients, according to the instructions and supervision of the grandmother. Served at the table, eggplants in oil represent one of the reasons to stay together with your guests for a little longer.
